During the week, I don’t always get to make a big breakfast. We usually do something simple: pancake sausage sticks, jimmy dean sausages (which I often cook the night before to save time) and eggo pancakes.
On the weekends, I enjoy making a larger breakfast/brunch spread. Sometimes bacon, pancakes, or sausage links are in the mix … it all just kind of depends on the day.
Today we kept it simple: biscuits, scrambled eggs with cheese, fried brats, mandarin oranges and grits.
My oldest son said “momma, this is so good!” It’s safe to say my kiddos were happy to have a big breakfast today!
Growing up, I spent many summers in Mississippi for family reunions and church revivals. My grandmother & great grandmother would always make a huge breakfast, lunch and dinner. One of my favorite parts about breakfast in Mississippi was grits with sugar. All my friends tease me for putting sugar on my grits, but I craved it during my last pregnancy and at least 2 to 3 times a week I would have grits with sugar, topped with scrambled eggs, and sometimes sausage or bacon. Does anyone else eat grits, or like sugar on them?
