Crockpot Magic: White Chicken Chili

Need something for dinner that’s not only delicious, with the right amount of kick to it… and also extremely easy?

Well, you’re in luck!

A staple recipe in our household which I got from Amy Hanten, “The Cooking Mom,” is a must have to add to your dinner list as well!

Lately, I’m all about convenience…

Wait, who am I kidding? I’m always about convenience LOL, but sometimes I make things harder than they need to be… you know, like trying to cook on top of the stove ?!?! I mean, I love to cook for my family but realistically time isn’t always on my side most evenings during the week.

So, in an effort to have more time with my family in the evenings, I’ve pulled my crockpot back out and am putting it to good use.

Yesterday was crockpot spinach artichoke dip (I’ll post that recipe too), and tonight, it’s yummy, early, goodness: white chicken chili.

What you’ll need:

  • Crockpot
  • Crockpot liners (for easy cleanup)
  • 3-4 large Chicken Breasts
  • Salt & Pepper
  • 1 Jar of White Great Northern Beans
  • 1 Jar of Green Salsa (I personally Herdez Salsa Verde Mike)
  • 1 container of Chicken Stock
  • Ground Cumin ( To taste)

For toppings, I typically add: Fritos & shredded mozzarella cheese

This can be prepared on the stove top. You would just need to bake or boil the chicken first.

In the crockpot, I added the crockpot liner, rinsed and seasoned chicken breast to taste… and then let those cook on high for 3 to 4 hours. After shredding the chicken breast in the crockpot, I then added rinsed and drained white Great Northern beans, salsa Verde, chicken stock, and ground cumin (to taste). I then let it cook on high for 4-5 hours. And, that’s it! Minimal prep, and pretty much hands off maintenance.

If you enjoy white chicken chili, this recipe is definitely for you. To be honest, I was skeptical at first, but now I absolutely love it. And I promise you… The Fritos & mozzarella cheese brings it all together!

A great side for this is sweet cornbread… mmmmm!
